This super healthy cobbler can be breakfast, lunch, dinner or your go to dessert when you just have to have a little sweetness. The low-fat granola has the satisfying crunch and the apples and cranberries bring the sweet and tart. It’s easy to make so make lots for those moments when friends drop by.
Ingredients
Ghee
1 ½ C of 2 small apples; Granny Smith, Braeburn or Honeycrisp, cored, quartered and thinly sliced
2 Tbs. dried cranberries
1 Tbs. Honey
1 Tbs. water
1 tsp. vanilla
½ tsp. ground cinnamon
¼ tsp. ground nutmeg
2 Tbs. low-fat granola without raisins
Instructions
Preheat oven to 375 degrees. Coat two 6-ounce custard cups or other 6-ounce oven-going dishes with ghee; set aside. In a medium bowl, stir together apple slices, cranberries, honey, water, vanilla, cinnamon and nutmeg. Divide mixture between prepared custard cups. Cover cups with foil.
Bake for 20 to 25 minutes or until apples are tender. Top with granola. Bake uncovered, about 5 minutes more or until granola is lightly browned.
