This dessert hits all of the high points for a breath-freshening desert that also has high nutrient value.  It is simple, delicious, 100 calories, and loaded with fiber, vitamin C, and a variety of antioxidants.  Enjoy the light fresh combination of mint, lime, apple, and cucumber.

Ingredients
1 large Granny Smith Apple
1 large cucumber (3/4 cup peeled, seeded and diced)
1 Tbsp. chopped mint leaves
1 ½ Tbsp. lime juice
2 tsp. raw honey (optional)

 

Instructions
Blend all of the ingredients together
Pour the mixture into ice cube trays and freeze
Once frozen, blend the ice cubes to slush one more time and freeze in an airtight container.
