This Avocado on Sourdough Toast is incredibly nutritious.  Avocado, a creamy superfood, may aid weight loss by enhancing GLP-1 production. Its fiber slows digestion, leading to gradual glucose release. Monounsaturated fats further support GLP-1 release. Seeds like sunflower or chia also contribute to their fiber content. Add tomatoes for extra fiber and eggs for extra protein on the easy-to-digest sourdough toast, making this a perfect way to start your day!

3 tablespoons coriander/cilantro finely chopped

2 tablespoons red onion finely chopped 1 tablespoon for milder flavor

3 whole medium ripe avocados

½ teaspoon Green chilies (optional)

Sunflower seeds

1 teaspoon lemon juice

⅛ teaspoon salt or to taste

Pinch finely ground black pepper

4 slices Bread 4-6 slices based on the size of sourdough bread.

Add the chopped coriander, spring onions, red onions, and red jalapeño (if using) into a medium bowl.

Slice the avocados in half, scoop out the flesh, and add it to the bowl. Add salt, black pepper, and lemon juice.

Mash the avocado mixture with a masher until creamy and smooth or until desired consistency.

Using your spoon, give the avocado mix a final stir.

Toast your bread until golden and crispy, spread it with salted butter, and then spread the avocado mix. Top with sunflower seeds. Serve and enjoy!
