This Baked Mamey Sapote pudding is worth the effort to make. It is loaded with vitamins, fiber, minerals, and antioxidants; it’s a true powerhouse. Notably, it’s abundant in vitamin C, which supports immunity and potassium, essential for heart health. Including whole milk and eggs adds ample protein, transforming this treat into a wholesome indulgence.

Ingredients

1 1/2 cups of mamey sapote, pureed

1 cup of sugar

2 cups of whole milk

1 tablespoon of vanilla extract

1/4 teaspoon of salt

4 large eggs

1/2 teaspoon of cinnamon

1/4 teaspoon of nutmeg

1 tablespoon of butter, melted

1/2 cup of all-purpose flour

Instructions

Start by preheating your oven to 350 degrees Fahrenheit.

In a large bowl, combine the pureed mamey sapote and sugar. Stir well until the sugar is fully incorporated into the fruit.

Mix the whole milk, vanilla extract, and salt in a separate bowl until well combined. Then, gradually add this liquid mixture to the mamey sapote mixture, stirring constantly as you do so.

Crack the eggs into a separate bowl and beat them until they’re smooth. Then, slowly add them to the mamey sapote mixture. Stir well to ensure they’re fully integrated into the mixture.

Next, add the cinnamon and nutmeg to the pudding mixture. Stir well to combine.

Drizzle in the melted butter, stirring all the while to ensure it gets evenly distributed throughout the pudding mixture.

Sift the all-purpose flour into the pudding mixture. Stir well to combine, ensuring no lumps are in the mixture.

Pour the pudding mixture into a baking dish. Place the dish in the preheated oven and bake for approximately 45 minutes, or until the pudding has set and is golden brown on top.

Finally, remove the pudding from the oven and let it cool before serving.
