Grilled pineapple following a summer time meal is the perfect dessert.  Pineapple is loaded with fiber which leads to a feeling of fullness, helping with weight loss.  The vitamin C supports healthy teeth, perfect for biting into that juicy slice of grilled pineapple.

Ingredients

3 Tbs. Olive Oil

1 tsp. Ground Cinnamon

1 Fresh pineapple, peeled, cored and cut into ½ inch slices

½ C. sweetened shredded coconut, toasted

Instructions

In a small bowl, combine oil and cinnamon.

Brush on both sides of pineapple slices

Moisten a paper towel with olive oil: using long tongs, rub on grill rack to coat lightly.

Grill pineapple, covered, over medium heat or broil 4 inches from heat 5-7 minutes or until lightly browned turning once.

Place pineapple on dessert plates.  Sprinkle with coconut

Bake the coconut on 350 in the oven for 5-10 minutes or cook in a skillet over low heat until golden brown.  Stir occasionally.
