This Blackberry Quinoa bowl is a hearty and delicious substitute when you’re not in the mood for oatmeal but want a substantial and filling breakfast. Cook the quinoa ahead, so making breakfast takes only minutes.
½ cup uncooked quinoa rinsed well underwater
¾ cup water
1 cup unsweetened almond milk
1 teaspoon cinnamon
1 teaspoon vanilla extract
1 tablespoon maple syrup
Handful of almonds
2 teaspoons flax seeds
¼ cup blackberries
Dried rose buds for garnish

Fill a small pot with quinoa and water and bring to a boil. Reduce the heat to the lowest and cook covered until all moisture is gone, about 15 to 20 minutes, or until fluffy. Let it cool.
Mix almond milk, cinnamon, vanilla extract, and maple syrup.
Share cooked quinoa in bowls and pour the milk mixture over each.
Top with almonds, flax seeds, blackberries, and dried rose buds.
