Carrot Cake Smoothie
This healthy carrot smoothie can be prepped the night before for an easy morning breakfast. Simply put all of the ingredients except the frozen fruit into your blender and refrigerate. In the morning add the banana and pineapple and blend. It is full of complementary nutrient-dense flavors and tastes like carrot cake without the cake calories.
1 cup chopped carrots. Steam and cool if you don’t have a high power blender, or to make extra smooth for kids.
½ cup plain Greek yogurt
½ cup unsweetened vanilla cashew, or almond milk
¼ cup frozen diced pineapple
2 tbsp. diced walnuts
1 tbsp. flaked coconut
¼ tsp cinnamon
Pinch of nutmeg
For Topping: shredded carrots, crushed walnuts
Add all of the ingredients to your blender: carrots, banana, Greek yogurt, milk, pineapple, walnuts, coconut, cinnamon, and nutmeg.
Blend until smooth
Top with additional carrots, coconut, and crushed walnuts.
