Cashew Milk

As one of the creamiest of all nuts, cashews produce rich delicious milk for people who prefer to not use dairy.  This is a good plant-based milk to add to coffee as a creamer.  It is also a perfect addition to smoothies, especially when you’re trying to get your children or spouse (hint hint) to drink one daily as a great source of nutrition.  I have so many uses for it, that I am now making a pitcher full every week.  Cashews are a great source of magnesium, which helps metabolize food.  Magnesium is also involved in muscle relaxation and neuromuscular transmission and activity.


4 cups raw unsalted cashews



Soak the cashews overnight, covering the nuts completely with water

Add the cashews to a blender and mix

Add water to get your desired consistency

Refrigerate for up to one week
