This is an easy way for vegans and all the rest of us health nuts to enjoy chocolate covered almonds that are gluten, and dairy free! Almonds are an excellent source of vitamin E (beautiful skin) and are high in antioxidants. Use dark chocolate that is 100% pure chocolate and at least 70% cacao. This recipe does not have the traditional sweetness of other chocolate covered almonds which are often dipped in milk chocolate; however, it is a guilt-free way to enjoy the medicinal benefits (lowers LDL and raises HDL) of pure chocolate.
Ingredients
2 whole cups of raw almonds
6 ounces of dark chocolate (1 ½ cups melted)
Large pinch of sea salt
Instructions
Line a large baking sheet with parchment paper.
Add chocolate to a large microwave-safe bowl, and microwave on high 30 seconds, stir and then repeat 1-2 more times until chocolate is fully melted
Stir together the almonds and chocolate, making sure to coat each almond
Carefully lift the almonds one by one, removing excess chocolate and place onto the baking sheet.
Sprinkle with sea salt, then let almonds set completely, or put in the refrigerator for quicker results.
