This Chunky Sweet Potato Casserole gets its sweetness from the addition of cranberries, pomegranate, and orange juice. Ceylon cinnamon is the preferred spice for this dish as it has a sweeter, more delicate flavor than the more common cinnamon.


3 medium sweet potatoes peeled and cut into 3/4″ chunks

1/3 cup pistachios chopped

1/3 cup walnuts chopped

1/3 cup fresh cranberries (frozen work. too)

1/4 cup pomegranate juice

1/4 cup orange juice

1/2 tsp Ceylon cinnamon

1/2 tsp cardamom

Juice from ½ lemon

Salt and Pepper to taste


Preheat oven to 350°F.

Place all of the ingredients into a bowl and mix thoroughly.

Place mixture into a casserole dish and cover with foil.

Bake for 45 minutes to 1 hour or until potatoes are soft.
