Creamy Avocado Egg Salad

The addition of avocado to this Creamy Avocado Egg salad means you can enjoy egg salad without the mayo if you would like. The naturally creamy texture of avocado is a rich substitute. Avocados are trans-fat-free and loaded with fiber, vitamins, and minerals. The eggs are an excellent source of Choline (supports memory) and provide numerous vitamins and minerals to this delish nutritious dish.
Ingredients
1 medium avocado pitted and peeled
3 hard-boiled eggs peeled and chopped
2 tablespoons Greek yogurt sour-cream or light mayonnaise (optional)
1 teaspoon fresh lemon or lime juice
1 tablespoon minced cilantro parsley, dill, or chives
Salt and fresh pepper to taste
Instructions
In a medium bowl, Add avocados and mash with a spoon until chunky.
Add the remaining ingredients and mix with a spoon until creamy.
Serve on whole-grain toast or enjoy with toasted pita chips.
