This super nutrient-dense Crunchy Summer Salad is so delicious you’ll eat it year-round. It can be a main dish with a few protein additions or turn it into a breakfast salad by adding hard-boiled eggs.


Red and green cabbage

Red onion



Pumpkin seed

Baby spinach or baby kale leaves

Dressing recipe – enough for one medium salad bowl

1/4 cup olive oil

2Tbs balsamic vinegar

1/2 tsp Dijon mustard

1T honey

sea salt flakes and back pepper


Thinly slice the onion, radishes, and carrots

Tear lettuces into bite-size pieces

Combine all ingredients and lightly toss

Drizzle with the salad dressing

Top with pumpkin seeds and enjoy.
