Dragon fruit is beautiful, and this Dragon Fruit Smoothie Bowl is almost too good looking to eat. However, since it’s chock full of nutritious vitamins and minerals, dig in and enjoy this creamy dish for breakfast or any time of day.
1 banana chopped and frozen
1 C. mango, chopped and frozen
1 C. dragon fruit, chopped and frozen
¼ C. full fat, canned coconut milk
Nuts and nut butter
Add the frozen fruit to a food processor. Allow to sit at room temperature for about 5 minutes to thaw before beginning to process gently.
Add coconut milk, and then process until very smooth and the mixture begins to fluff up.
Use a spoon to push down any chunks of fruit that aren’t processing.
Top with fruit, nuts, coconut, or nut butter, or enjoy soft-serve ice cream!
