This gluten-free, vegan Flaxseed Pudding is a delicious finish for a meal or a great breakfast or mid-day snack. Blueberries, strawberries, or your fav fruit makes a great topping.
2 Tbs. ground flaxseed
2 pitted dates
½ C. Almond Milk
Toppings: yogurt, cacao nibs, apple butter, pumpkin butter, cinnamon, sliced almonds,

Add flaxseed, almond milk, and dates in a blender and blend until smooth.
Pour the mix in a small container and refrigerate for 1-2 hours to allow the pudding to set
Add toppings and enjoy!
