This delish Greek Salad with Edamame is loaded with flavor. And what’s equally impressive is the addition of edamame, giving this dish an extra boost of fiber–healthy for your teeth and digestive system.
Ingredients
¼ cup red-wine vinegar
3 Tbs. extra-virgin olive oil
¼ tsp. kosher, sea, or pink salt
¼ tsp. fresh ground black pepper
8 C. chopped romaine.
1 C. halved cherry or grape tomatoes
16 oz. frozen shelled edamame (about 3 cups)
½ Cucumber, sliced
½ C. crumbled feta cheese
¼ C. slivered fresh basil
¼ C. kalamata olives
¼ C. slivered red onion
Instructions
Whisk vinegar, oil, salt, and pepper in a large bowl.
Add romaine, edamame, tomatoes, cucumber, feta, basil, olives, and onion.
Toss to coat.
