These Healthy Vegan Sweet Potato cookies are the perfect go-to snack. They have just a hint of sweetness and are effective at providing a soft, chewy treat without the processed sugar that is so detrimental to health.  Be prepared to give your palate time to adjust to them; soon, you will have a favorite healthy snack.


¼ C. Mashed sweet potato from large potato (2.5 cups cubed)

½ C. Mashed banana from 2 medium bananas (use RIPE bananas)

½ C. + 2 Tbs. Oat flour, use gluten-free if preferred

¼ C. Brown rice flour (or use more oat flour)

½ C. Rolled oats

1 Tbs. Maple syrup, optional

1 tps. cinnamon teaspoon, optional


Preheat oven to 375℉/190℃, and line a large baking sheet with parchment paper.

Place peel and cube sweet potatoes in a pan or pot and cover with water. Bring to a boil and cook until soft, approx. 8-10 minutes. Drain and return to the pan. Mash well using a potato masher.

Add all the remaining ingredients to the pan with mashed sweet potato and mix well.

Use a cookie scoop to make cookie balls and place them on the baking tray. Then, gently press each one down with a fork to flatten and shape them. Bake the sweet potato cookies for 15-18 minutes, until golden.

Remove from the oven, allow to cool for 5 minutes and enjoy.
