This yummy Honey Glazed Spice Carrots recipe is a great way to add color to your meal and get the benefits of carrots’ orange hue, which is due to the presence of a plant pigment called beta-carotene. The body converts this pigment into vitamin A, which supports immune function, reproduction, vision, organ health, skin, and growth.

Ingredients

tablespoons unsalted butter, melted.

3 tablespoons honey

1 tablespoon monk fruit sugar

1 1/2 teaspoons kosher salt

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon black pepper

2 pounds small carrots peeled and trimmed.

1 tablespoon thinly sliced fresh chives.

Instructions

Preheat oven to 400°F. Stir together the first 7 ingredients in a small bowl; reserve 2 tablespoons of mixture. Pour the remaining butter mixture over the carrots; toss to combine. Spread in a single layer on 2 baking sheets; bake in a preheated oven for 30 minutes.

Toss roasted carrots with reserved 2 tablespoons of butter mixture: and transfer to a serving platter. Sprinkle with chives.
