Harvesting a large crop of herbs doesn’t mean you have to throw some of them away because you won’t use them in time.  Rather freezing the herbs at the height of their freshness means you will enjoy your planting efforts for a long time. Make your cooking interesting by combining various herbs together before freezing.




Extra Virgin Olive Oil



Pick the hardiest herbs and clean thoroughly

Wash and completely dry

Chop the herbs so they fit about 2/3 from the top of the ice cube tray compartment

Add olive oil to each compartment. Almost to the top

Cover the tray with reusable plastic and place in freezer

Trays can be stacked. Freeze overnight or for several days

Remove the cubes from the ice tray and store in an airtight freezer-safe container

Write the date and contents on the container
