This easy recipe confirms that simple can be a key ingredient for a delightful dessert.  The sweetness of the ripe jackfruit and bananas combined with coconut cream and a sprinkle of graham crackers on top make for a delicious, dairy-free treat.

2 ripe frozen bananas, sliced
4 pods ripe jackfruit, chopped
1 can of coconut cream
1 graham cracker
1 Tbsp. coconut oil


Instructions – Serves 2
Heat 1 Tbsp. of coconut oil over medium-low heat.  Crumble the graham cracker into the oil.
Toast until slightly darkened.  Remove from heat
Add ½ cup of coconut cream, jackfruit, and frozen banana in a blender.  Reserve a few banana slices to the top.  Blend until smooth.
Pour into glass and top with remaining banana slices and toasted graham crumbs.
