Lemon Turmeric Quinoa

This easy and very satisfying delicious quinoa dish only has 5-ingredients.  It’s the perfect way to spice up a meal.


1 cup of quinoa (when cooked, becomes 3 cups)

1 tsp. coconut oil

Juice and zest of ½ lemon (about 1 tablespoon, and 1 teaspoon of zest)

1 ½ tsp turmeric powder

¼ tsp pink or sea salt

Optional: chopped green onions, Thai basil, ground black pepper, cashews


Rinse the quinoa in a mesh sieve until the water runs clear.  Transfer to a pot.  Add two cups of water to the one cup of quinoa and the salt. Bring to a boil. Cover, reduce heat to medium-low and simmer until the water is absorbed about 15-20 minutes.  Set aside from the heat for 5 minutes, uncover and fluff with a fork, and stir in the remaining ingredients.
