The music of Drake’s popular, “Toosie Slide” song added to the warm atmosphere of the studio, a contrast to the cold, wet early morning weather outside. “This is so like Ana; @fitbasicsbyana keeping exercise fresh and interesting.” thought Annie. She loved her workouts mainly because Ana was such an incredible instructor. Her expertise in helping students get in touch with their body and develop healthy fitness goals, coupled with her patience made her a popular personal trainer. Afterward, Annie hurried home, she was hungry, and on her exercise days LJ made breakfast.
“Hey babes, I’m home,” she called. “I wonder where he is?” Annie walked into the kitchen and saw the makings of a salad under construction. She looked out the window at the vegetable garden where LJ was picking romaine lettuce, and radicchio.
“I’m almost done. I’ll be just a minute.”
Back in the kitchen, LJ placed the washed romaine, chopped radicchio, hard-boiled eggs, cherry tomatoes, corn, sunflower seeds, and quinoa in a bowl. Next, he added the carrot ribbons and poured his homemade Greek Yogurt Ranch dressing over the salad. Annie poured two cups of green tea and slid crispy sourdough, topped with ghee out of the toaster oven as he mixed.
After expressing gratitude, Annie took the first bite and savored the combination of textures and flavors. “Sweetheart, this is so good. This salad packs a nutritional punch too.”
“I’m glad you like it because the lettuces are from our garden. My research shows that starting the day with a salad that contains the right ingredients can provide vitality that lasts for hours and helps avoid impulse snacking. For example, quinoa is a good energy source due to its high amount of protein. Its insoluble fiber feeds our friendly gut bacteria, contributing to healthy digestion. Although the romaine is low in fiber, it is high in calcium, phosphorous, magnesium, and potassium. Radicchio contains inulin, a soluble fiber. It is also high in vitamin K, which supports healthy aging. The tomatoes are packed with lycopene, an inflammation reducer. They are essential for men because several compounds in tomatoes help reduce the risk of prostate cancer.”
“Not to mention the burst of flavor you get when you bite into a cherry tomato,” said Annie. “Nothing says breakfast to me like eggs, which I love. They are a convenient source of just about every nutrient you need. As for the sunflower seeds, they contain the crunch factor and healthy fats, which go a long way in helping keep you fuller longer, and lower high cholesterol and blood pressure. Lettuce for breakfast is a good idea. for the win!”
“Annie, I’m not one to eat the same thing for breakfast every morning, but if you add some curly endive, because its high in fiber, and top the entire salad with balsamic vinaigrette to go along with a slice of melted feta cheese on toast, you’ll definitely get my attention.”
“Is that all it takes LJ,” smiled Annie.
