Once again the Mediterranean diet has been voted as the number one method (US News and World Report’s 2020 ranking of best diets) for healthy eating. This diet supports healthspan; the length of time a person is healthy, not just alive. This is an excellent and delicious first meal of the day because it is light and healthy. The eggs are baked with olives, tomatoes and feta cheese. I use homemade creamy cashew milk. Add spinach and broccoli for more taste and nutrition.
Ingredients
Six eggs
½ cup milk or cream
¼ cup chopped Kalamata olives
¼ cup chopped Spanish olives
¼ cup crumbled feta
1 tsp. pink salt
1 tsp. oregano
½ tsp. pepper
Instructions
Pre-heat oven to 400 degrees
Grease an 8 inch pie pan or quiche dish
Whisk up eggs and milk until well blended.
Add remaining ingredients and mix well
Bake for 15-20 minutes or until eggs are set.
