This is an easy and super tasty salsa, although it can be used as a topping or a side dish. All of the ingredients have big-time nutritional benefits, so enjoy it knowing that it is good for you and your waistline.


2 peeled and smashed garlic cloves
2 Tbsp. olive oil
3 ribs of celery
1 cup finely chopped pitted green olives (5 ounces)
2 Tbsp. drained and chopped capers
2 Tbsp. chopped mint
Freshly ground pepper


In a small skillet heat the olive oil.  Add the garlic cloves and cook over moderate heat until golden, about two minutes. Let the oil cool, and then discard the garlic cloves.  Transfer the garlicky oil to a bowl and add the diced celery, chopped green olives, capers, and mint.  Toss the salsa, season with freshly ground pepper and serve.
