These tartlets are tasty and delish. The combination of the caramelized onions, gruyere and parmesan cheese topped with chives is a savory flavor. Onions are one of the highest contributors of antioxidants to the human diet, so enjoy this appetizer knowing it’s healthy.
Ingredients
2 tsp. olive oil
1 Tbs. white balsamic vinegar
1 sheet Pepperidge Farms frozen puff pastry dough, thawed
1/3 cup Gruyere cheese
1/8 cup Parmesan cheese
¼ cup chopped chives
2 small red onions, thinly sliced
2 small yellow onions, thinly sliced
Flour for rolling the pastry dough

Mini-muffin pan for 24
2-inch cookie cutter

Instructions
Preheat the oven to 400
Unfold the dough and allow to come to room temperature
Heat oil in a skillet over medium-high heat.
Add onions, sauté 5 minutes
Reduce heat to medium and cook the onions 15 minutes more until caramelized (brown)
Add the vinegar
Lightly dust a work surface and place the unfolded dough on it. Dust the dough with flour and roll into 12 inches.
Cut dough into 24 tartlets and arrange in the muffin pan. Prick each.
Put the onion mixture in each tartlet
Sprinkle with gruyere cheese
Sprinkle with parmesan cheese
Sprinkle with chives
Bake at 400 for about 15 minutes or until dough is lightly browned
