Most people I know are nuts for pistachios. I honor and share their passion for those little green power houses with this delish recipe for pesto using pistachios instead of pine nuts. It’s a great topping for salmon, and an interesting twist for a pasta pesto dish.

1 ½ C fresh basil
½ C cilantro
¼ – 2/3 C olive oil or pistachio oil
2/3 cloves garlic
1 tsp. lemon or lime zest
¼ C grated parmesan or asiago cheese
1C shelled dry roasted pistachio

Put all ingredients into a food processor and blend until smooth. Start with a ¼ cup of oil and add more if needed.
