This is a pretty salad that is a seductive combination of strawberries, baby spinach leaves and crushed pistachios sprinkled on top. It is so easy peasy. It can be an appetizer or a side dish.
Baby spinach leaves
Handful of shelled pistachios
2 Tbs. Olive Oil
1 Tsp. Balsamic Vinegar
Start with a bed of baby spinach leaves in a bowl
Top with chopped strawberries
Using a mortar and pestle, roughly grind the pistachio nuts and sprinkle on top of the salad.
For the dressing whisk together olive oil, balsamic vinegar and a pinch of salt.
Drizzle over the salad.
