Who doesn’t love a power bowl? They are consistently chock-full of nutritional benefits that taste good and are good. This Protein Grain Power Bowl is no different, plus the poached egg is the star of the bowl and coats the grains nicely as you slice into it. It takes a bit longer than most of our featured recipes, but you’ll pat yourself on the back after you power through a long day.
1 cup green lentils
6 cups chicken stock divided into 2
1.5 cup red quinoa
6 cups arugula
4 cups pea shoots
1/4 cup pine nuts
1/4 cup almonds
Four poached eggs

In a small pot, add in green lentils and chicken stock (3 cups). Bring the pot to a boil, then lower heat to simmer for 20-30 minutes.
Simultaneously, bring a second pot of chicken stock (3 cups) to a boil and add in the red quinoa. Cover the pot and let the quinoa simmer for 12-15 minutes before setting it aside to rest until the lentils are finished cooking.
In a large bowl, combine the lentils, quinoa, arugula, pea shoots, pine nuts, and almonds. Toss to combine.
After portioning out into individual bowls, top with a poached egg and serve immediately.
