This Roasted Pumpkin Seeds, Dried Cranberries, And Dark Chocolate Snack Mix makes an excellent mid-day snack. Enjoy this guilt-free, but use only dark chocolate, 80% or more cacao.
1 cup pepitas pumpkin seeds
One-half – 1 teaspoon oil, optional
salt, optional, to taste
1/2 cup dark chocolate chips or chunks
1/2 cup dried cranberries
Preheat oven to 350 degrees F.
Toss pepitas in a light coat of oil and then season with salt.
Cook for 5 minutes. Stir.
Cook for 3-5 minutes or until seeds turn golden brown.
Remove from oven and cool completely.
Toss with chocolate and cranberries and enjoy your delicious snack!
