Savoy cabbage has a mild taste; mixed with tart apples, walnuts and tossed with cider vinaigrette, and topped with parmesan cheese makes for a savory hearty salad. Feel free to toss in a handful of shredded carrots for added crunch and fiber.
Ingredients
1 savoy cabbage, thinly sliced (ideally with a mandolin)
2 tart apples, chopped into bite size pieces
½ C. of Walnuts, toasted
Parmesan Cheese
Dressing
Mix up a Vinaigrette of cider vinegar and olive oil with a bit of maple syrup
Instructions
Toss the sliced cabbage in a bowl
Add the apple pieces and toss
Add the walnuts
Mix all ingredients together, drizzle vinaigrette enough to coat the salad
Top with parmesan cheese
