Most people I know love creole food. Sometimes the problem with it, though, is the high amount of unhealthy fat. This Skinny Shrimp Po Boy is the answer! It is loaded with all the savory taste and texture of a classic shrimp po boy without the fat. Enjoy it on a whole grain banquette.
Ingredients
1 cup Greek yogurt
2 tbsp Dijon mustard
2 clove garlic, minced & divided
1 tsp Creole seasoning
1/2 tsp hot sauce
1 tsp Worcestershire sauce
1 tbsp olive oil
1 lb. shrimp
1 tsp paprika
1/4 tsp cayenne
salt and pepper to taste
4 sandwich loaves, whole grain
Tomato, sliced
Lettuce, shredded
Instructions
In a small bowl, mix Greek yogurt, Dijon mustard, 1 tsp garlic, Creole/Cajun seasoning, hot sauce, and Worcestershire sauce until blended.
In a large sauté pan, heat olive oil and garlic over medium-high heat 1-2 minutes. Add in shrimp and sprinkle with paprika, cayenne, salt, and pepper. Cook 5-6 minutes until no longer pink. Remove from sauté pan and set aside.
Cut sandwich loaves lengthwise in half and generously spread remoulade sauce—layer with shrimp, lettuce, and tomato. Serve and enjoy!
