Southwestern Egg Scramble with Black Beans
This easy and spicy dish is a delicious combination of black beans, avocado, and scrambled eggs. It is substantial and a quick way to get many nutritious minerals including vitamin D.
Ingredients
1 tsp olive oil
1/2 cup Black Beans, Canned
1/2 tsp ground cumin
1/2 tsp Garlic Powder
1/4 cup water
2 egg
1/2 medium avocado
1tbsp. scallion(s)
1 pinch sea salt
1 pinch Black Pepper
Instructions
Heat the oil in a sauté pan over low heat. Add in the beans, cumin, garlic and water and bring to a gentle simmer. Remove the beans from the pan and set aside.
Crack the two eggs in a bowl and whisk. Pour the eggs into the pan and cook until scrambled, and season with salt and pepper.
To plate: combine the eggs with the beans and top with avocado, scallions and red pepper flakes if desired.
