Spirulina Blueberry Chia Parfait

This is a great looking and tasting Star Wars-type parfait you and your children will love. The combination of Spirulina and chia seeds topped off with blueberries makes this a great first meal of the day or even an end of the day dessert.

Ingredients
Bottom layer
1 cup coconut milk
4 Tbsp. chia seeds
1 Tbsp. maple syrup
¼ tsp. lemon extract
½ tsp. blue spirulina
Top layer
6 oz. plain coconut milk yogurt or preferred yogurt
1 cup fresh blueberries
Instructions
In small bowl, stir together bottom layer ingredients.
Spoon half into each serving container and refrigerate for at least 4 hours until thick.
Top each with 3 oz. plain yogurt. Finish each with ½ cup fresh blueberries on top.
Serve immediately or store refrigerated and eat within 2 days.
