Strawberries were swapped out of this recipe and replaced with one peeled grapefruit to make this Tomato, Grapefruit, Watermelon Fresca. It is great for after a workout when you’re sweaty. It will cool you down, and the amount of water from the trio helps rehydrate. All three fruits are loaded with vitamin C, which supports our body’s ability to make collagen, an important hair and skin protein.
Ingredients
6 cups watermelon, peeled and chopped
1 Grapefruit, peeled
1 lb. Tomatoes, ripe & juicy, cored and halved
¼ C. chopped fresh mint
2 Tbs. fresh lime juice
4 C. cold water
Pinch of salt
Ice
Tomato rounds, Mint sprigs & Watermelon wedges for garnish
Instructions
In a blender, puree about 6 cups peeled, chopped watermelon (from about half a 5-pound watermelon); 1 lb. ripe juicy tomatoes, halved and cored; 1 peeled grapefruit; 1/4 cup chopped fresh mint; 2 tbsp. fresh lime juice; and a pinch of salt until very smooth, 2 to 3 minutes.
Strain into a pitcher, pressing on solids with a spatula to release liquid. Stir in 4 cups cold water. Refrigerate until cold, about 2 hours.
Serve over ice, garnished with tomato rounds, mint sprigs, watermelon wedges, and/or lime wheels.
