4 cups cauliflower, sliced into 1/2-inch slabs
3 tablespoons ghee
2 teaspoons turmeric
1/4 teaspoon red chili pepper, (can substitute with cayenne pepper)
1 teaspoon Himalayan Pink salt, or to taste
In a large non-stick skillet, heat ghee on medium heat. Add turmeric and red chili and stir for no more than 30 seconds to release their flavor and aroma.
Add prepared cauliflower with salt and toss (or stir) to evenly coat. Arrange the cauliflower in an even layer on the skillet and leave it to brown, around 5 minutes.
Turn each piece of cauliflower. Cook until the second side is caramelized.
