Veggie-Filled Greek Hummus Power Bowl

This classic Mediterranean salad is chock full of raw vegetables that are fiber, vitamin, and mineral rich; every single one – good for you. The combination of Greek flavors all come together with a topping of hummus. Pick up the ingredients at a Farmers Market if you can, and chop and refrigerate when you get home so that it takes only minutes to assemble and enjoy.
Ingredients
- 2 cups kale, chopped
- 1/4 cup cucumber, diced
- 1/4 cup cherry tomatoes, halved
- 3 Kalamata olives
- 1/2 cup bell peppers, diced
- 1 tablespoon parsley, chopped
- 1/4 cup hummus
- 1/4 cup tofu, cubed
- 1/2 lemon, squeezed
- 1/4 cup red onion, diced
- Himalayan sea salt
- black pepper

Total time: 10 minutes
Yield: 1 salad
To assemble the bowl, add the chopped kale to a large serving bowl and top with all ingredients. Enjoy!
