Zero-Waste Veggie Soup with Herb Pesto
This recipe transforms vegetable scraps that might otherwise be discarded into delicious, nourishing soup. Environmental Benefit: This recipe reduces food waste by utilizing vegetable parts that are often thrown away. Food waste in landfills produces methane, a potent greenhouse gas, so this approach addresses a key environmental issue.
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 celery stalks, chopped
- 2 carrots, chopped
- 3 garlic cloves, minced
- 4 cups vegetable scraps (carrot tops, celery leaves, broccoli stems, mushroom stems, onion ends)
- 1 cup cooked white beans
- 1 bay leaf
- 1 teaspoon dried thyme
- 6 cups vegetable broth (homemade if possible)
- Salt and pepper to taste
- 1 tablespoon lemon juice
For the Herb Pesto:
- 1 cup mixed fresh herbs (parsley, basil, cilantro)
- 1/4 cup walnuts or sunflower seeds
- 2 tbsp nutritional yeast
- 1 garlic clove
- 3 tablespoons of olive oil
- Salt to taste
Instructions:
- Heat olive oil in a large pot over medium heat. Add onion, celery, and carrots, sautéing until softened, about 5 minutes.
- Add garlic and cook for another minute until fragrant.
- Add vegetable scraps, beans, bay leaf, thyme, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes.
- While the soup simmers, make the pesto by combining all pesto ingredients in a food processor until smooth.
- Remove bay leaf from soup and blend to desired consistency (leave chunky or purée smooth).
- Stir in lemon juice and season with salt and pepper.
- Serve with a dollop of herb pesto on top.
