The sweetness in this Zesty Apricot Salsa is the perfect foil for the red onion and peppers. Enjoy it with chips or your favorite fish.


1 lb. Apricots in 1/2″ diced

1/2 cup minced red onion

1/2 red jalapeno (seeded and minced)

1 teaspoon seeded and minced habanero pepper

2 tablespoons vegetable oil

2 tablespoons lemon juice


Combine all diced ingredients into mixing bowl.

Drizzle with oil and juice.

Refrigerate for up to two hours.
